If you don’t want to bring bottles of spices, seal the end of a straw, put your spice in and seal the other side. Make sure you label it!
Make sure you build the right size fire. Searing a steak wouldn’t require as much as a long and slow pork roast.

My tip would be to cook potatoes in foil over coals about 30 to 45 minutes. My huMom and Angel Scout Ali who was a grubmaster say that foil and cast iron are really good to cook with at campfires.
