Pots de Creme is one of my favorite desserts. If you’ve never had it, it is a loose custard similar to Creme brulee, only not quite as firm. The bummer is that when you order it in restaurants, they give you an itty bitty portion, and man, I could eat about a gallon of it.
Today’s S’mores recipe puts a marshmallowy spin on Pots de Creme. The thing that really gives me a jones to try it is that the marshmallow part is toasted with a propane kitchen torch. If you’ve been paying attention, you know that for me, S’mores are all about the charred marshmallow taste. And, I am dying to break out my kitchen torch.
The most difficult part of the recipe is incorporating the chocolate mixture into the egg mixture without cooking the egg. If the egg gets cooked, it will be like having bits of hard boiled eggs in your dessert. S’mores and hard boiled egg is not a combination I’m willing to try.
